Pumpkin Spiced

Any excuse to make more pumpkin flavored treats. I wanted to share a quick recipe with everyone.  I made two of these pumpkin spice smoothie jars.  I ate mine right away and was able to save the other in the fridge for William until he got home from work.

Any time you see something with Chia Pudding in it, it was most likely prepared the night before. To make chia pudding: You’ll need chia seeds, almond milk, and usually vanilla extract but I used pumpkin pie extract this time.  Stir 1/2 cup of chia seeds into 2 cups of almond milk and stir. Add a teaspoon of extract and stir until everything is evenly mixed.  Set in a jar or two and leave in the fridge over night or 5 hours (ish) before using.

Chia seed pudding


After taking the chia seed pudding out of the fridge it was already in the jar I wanted it to be, so I put a thin coat of pumpkin over the top of the pudding.  This is mainly for looks because I’m OCD like that.  In a blender blend a couple spoonfuls of the pumpkin, 3 spoonfuls of the vanilla yogurt, 1 spoonful of the rolled oats, a banana, an apple, and a few ice cubes all together.  Pour smoothie mixture over pudding, top with banana and apple slices, and sprinkle a little cinnamon on top. Voila!! You have a nice festive smoothie that looks way prettier than it should.
