Thankful

This Thanksgiving I am thankful for many things! I am especially thankful for my patient husband during our recent move.  We are finally moved into the Old Town house and slowly unpacking boxes.  The move was a little stressful because of all the unforeseen issues with the house we moved into.  Now that we are little more settled in we are beginning to enjoy our surroundings a little more.

We are so blessed to live in such a beautiful town.  I love the easy access to so many amazing trails and the plethora of blue skies Park City has to offer.

We will be in Yosemite with my family this thanksgiving but here is a snippet of our new home!

Pumpkin Spiced

Any excuse to make more pumpkin flavored treats. I wanted to share a quick recipe with everyone.  I made two of these pumpkin spice smoothie jars.  I ate mine right away and was able to save the other in the fridge for William until he got home from work.

Any time you see something with Chia Pudding in it, it was most likely prepared the night before. To make chia pudding: You’ll need chia seeds, almond milk, and usually vanilla extract but I used pumpkin pie extract this time.  Stir 1/2 cup of chia seeds into 2 cups of almond milk and stir. Add a teaspoon of extract and stir until everything is evenly mixed.  Set in a jar or two and leave in the fridge over night or 5 hours (ish) before using.

Pumpkin Spice Smoothie: 

Vanilla Greek Yogurt

Canned pumpkin

Rolled Oats

Apples

Bananas

cinnamon?

Chia seed pudding

After taking the chia seed pudding out of the fridge it was already in the jar I wanted it to be, so I put a thin coat of pumpkin over the top of the pudding.  This is mainly for looks because I’m OCD like that.  In a blender blend a couple spoonfuls of the pumpkin, 3 spoonfuls of the vanilla yogurt, 1 spoonful of the rolled oats, a banana, an apple, and a few ice cubes all together.  Pour smoothie mixture over pudding, top with banana and apple slices, and sprinkle a little cinnamon on top. Voila!! You have a nice festive smoothie that looks way prettier than it should.

Soaking up the Yard

HELLO!!! Where have I been?

I took a little hiatus. I was sick and knocked out for a week straight.  The only comfort I found was either in the bath, with a towel over my head or slurping soup.  Being sick and run down couldn’t have come at a worse time! William and I spontaneously decided to move into our Old Town house, leaving us frantically trying to get things in check.

Two years ago we bought a little mining shack and have had tenants in there ever since. We bought the home knowing we would remodel it in the future for many reasons but mainly because the home is still on a dirt foundation and feels like a full-on fun house by all the warping and bowing going on. The home was built in the 1800s and needs a lot of love. With it falling under the Park City Historic Homes category, we will have to patiently work with the city to get any plans done. With the current tenants all moving out this month, we thought what better time to live there and work with architects and contractors to see what potential this cute home has. In a nutshell this October turned a little more stressful than I had imagined.
